Thanksgiving meal planning season is upon us! Although we can all agree that the spotlight is usually on the turkey, it just wouldn’t be Thanksgiving without the help of a stellar supporting cast… enter these roasted sweet potatoes with honey and cinnamon. This new spin on an old classic lightens up the traditional sweet potato side. You know the one we’re talking about…. The one dripping with brown sugar and marshmallows? Don’t worry, these sweet potatoes are just as good, we promise you won’t miss all of the added sugar.

  • 4-5 medium sweet potatoes, peeled and cubed
  • 3 tbsp oil of choice (we like coconut oil for our sweet potatoes, but feel free to experiment with olive oil or even butter)
  • 2 tbsp honey
  • 2 tsp cinnamon

Directions:

  1. Toss sweet potatoes and oil in a large bowl to evenly coat.
  2. Drizzle honey over the top of sweet potatoes and oil, sprinkle in cinnamon and toss again until thoroughly mixed.
  3. Line a baking sheet (or two) with tin foil, and spread sweet potatoes out in a single layer.
  4. Bake at 375° for approximately 30 minutes, or until potatoes begin to brown slightly. Serve promptly.
